- 2 pounds chicken thighs
- 1 cup rice
- 1 cup chicken broth
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can coconut milk
- 1 cup green onions, sliced
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, bell pepper, and garlic, sauté until soft.
- Add chicken thighs and jerk seasoning, cook until browned.
- Stir in rice, chicken broth, and coconut milk.
- Bring to a boil, then reduce heat and cover, simmer for 20 minutes.
- Fluff with a fork, and garnish with green onions before serving.
Notes
- For a spicier dish, adjust the amount of jerk seasoning.
- This dish can be prepared in advance and reheated.
