- 8 ounces pasta
- 2 cups corn, cooked
- ½ cup red onion, diced
- 1 cup cherry tomatoes, halved
- 4 strips turkey bacon, cooked and crumbled
- 1 cup mayonnaise
- ¼ cup sour cream
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions; drain and let cool.
- In a large bowl, combine corn, red onion, cherry tomatoes, and turkey bacon.
- In a separate bowl, mix together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Add the cooled pasta to the vegetable mixture, then pour the dressing over and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For added flavor, include diced jalapeño or cilantro.
- This salad tastes even better the next day as the flavors meld.
