- 2 cups grated zucchini
- 1 large egg
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1/2 teaspoon black pepper
- 4 slices turkey bacon, cooked and crumbled
- 1 teaspoon dried oregano
- 1 teaspoon salt
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the grated zucchini with salt. Let it sit for 10 minutes, then squeeze out the excess moisture.
- Add the egg, breadcrumbs, parmesan cheese, minced garlic, black pepper, crumbled turkey bacon, and oregano to the zucchini. Mix well.
- Form the mixture into small patties and place them on a baking sheet lined with parchment paper.
- Bake for 20 minutes, flipping halfway through, until golden brown.
- Serve warm with your favorite dip.
Notes
- For added flavor, you can include some chopped fresh herbs.
- These bites can be frozen before baking for later use.
