- 1 pound cooked chicken, shredded
- 4 slices turkey bacon, chopped
- 1 cup white beans, drained and rinsed
- 1 can diced green chilies
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 1 cup corn, frozen or canned
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
Instructions
- In a pot, cook the turkey bacon until crispy.
- Add the onion and garlic, sauté until translucent.
- Stir in the chicken, white beans, green chilies, chicken broth, cumin, and oregano.
- Simmer for 20 minutes to blend flavors.
- Add the corn and heavy cream, season with salt and pepper.
- Cook for an additional 5 minutes until heated through.
Notes
- For a spicier chili, add diced jalapeños.
- Serve with cornbread for a perfect meal.
