- 2 tablespoons olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 2 cups chopped carrots
- 1 cup chopped celery
- 1 cup diced tomatoes
- 1 cup green beans, chopped
- 1 teaspoon dried basil
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic; sauté until onions are translucent.
- Pour in vegetable broth and add carrots, celery, and tomatoes.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add green beans, basil, salt, and pepper; simmer for another 10 minutes.
- Serve hot and enjoy!
