- 1 cup gluten-free flour
- 1/2 cup coconut sugar
- 1/2 cup almond milk
- 2 cups fresh strawberries
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the gluten-free flour and coconut sugar.
- Add almond milk, melted coconut oil, and vanilla extract, and mix until smooth.
- Fold in the chopped strawberries.
- Pour the batter into a greased cake pan and bake for 25-30 minutes.
- Allow to cool before serving.
Notes
- For added flavor, you can sprinkle some lemon zest in the batter.
- Serve with a dollop of vegan whipped cream.
