Ingredients

- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup almond milk
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup walnuts (chopped)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine all dry ingredients.
- In another bowl, mix wet ingredients until blended.
- Add grated carrots to the wet mixture and stir well.
- Combine dry and wet mixtures, then fold in walnuts.
- Pour the batter into a greased cake pan and bake for 30-35 minutes.
- Let it cool before serving.
Notes
- For added moisture, you can add unsweetened applesauce.
- The cake can be topped with vegan cream cheese frosting for extra flavor.
