- 4 large russet potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked turkey bacon, crumbled
- 1/4 cup green onions, chopped
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Bake the potatoes for about 1 hour, or until tender.
- Allow potatoes to cool slightly, then scoop out the insides into a large bowl.
- Add sour cream, cheddar cheese, turkey bacon, green onions, milk, garlic powder, salt, and pepper to the bowl. Mix until well combined.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake for an additional 20-25 minutes, or until heated through and slightly golden on top.
Notes
- This casserole can be prepared a day in advance and baked before serving.
- For a vegetarian option, omit the turkey bacon.
