Ingredients

- 1 can white beans
- 4 slices turkey bacon
- 1 cup diced tomatoes
- 1 cup diced carrots
- 1 cup chopped kale
- 4 cups vegetable broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Cook the turkey bacon in a pot over medium heat until crispy.
- Remove bacon, crumble, and set aside.
- Add diced tomatoes, carrots, and chopped kale to the pot.
- Add vegetable broth and bring to a boil.
- Stir in white beans, garlic powder, and onion powder.
- Reduce heat and simmer for 15 minutes.
- Season with salt and pepper, add the bacon back in, and serve hot.
Notes
- This soup can be made ahead and stored in the refrigerator.
- For a vegan version, replace turkey bacon with smoked paprika.
