- 4 large bell peppers

Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix ricotta, quinoa, spinach, Parmesan, Italian seasoning, salt, and pepper.
- Stuff the mixture into the bell peppers.
- Place stuffed peppers in a baking dish and pour marinara sauce over them.
- Bake for 30-35 minutes until the peppers are tender.
