  • 1 cup marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix ricotta, quinoa, spinach, Parmesan, Italian seasoning, salt, and pepper.
  4. Stuff the mixture into the bell peppers.
  5. Place stuffed peppers in a baking dish and pour marinara sauce over them.
  6. Bake for 30-35 minutes until the peppers are tender.
