Tomato Scallion Cheddar Frittata: A Deliciously Easy Recipe

  • 6 large eggs
  • 1 cup diced tomatoes
  • 1/2 cup chopped scallions
  • 1 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together eggs, salt, and pepper.
  3. Add the diced tomatoes, scallions, and half of the cheese to the egg mixture and stir to combine.
  4. Heat olive oil in a skillet over medium heat.
  5. Pour the egg mixture into the skillet and cook for about 5 minutes until the edges start to set.
  6. Sprinkle the remaining cheese on top and transfer the skillet to the preheated oven.
  7. Bake for 15-20 minutes until the frittata is set and golden brown.
  8. Allow to cool slightly before slicing and serving.

Notes

  • Feel free to add other vegetables or meats to your frittata for extra flavor.
