- 6 large eggs
- 1 cup diced tomatoes
- 1/2 cup chopped scallions
- 1 cup shredded cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, whisk together eggs, salt, and pepper.
- Add the diced tomatoes, scallions, and half of the cheese to the egg mixture and stir to combine.
- Heat olive oil in a skillet over medium heat.
- Pour the egg mixture into the skillet and cook for about 5 minutes until the edges start to set.
- Sprinkle the remaining cheese on top and transfer the skillet to the preheated oven.
- Bake for 15-20 minutes until the frittata is set and golden brown.
- Allow to cool slightly before slicing and serving.
Notes
- Feel free to add other vegetables or meats to your frittata for extra flavor.
- Best enjoyed fresh, but can be made ahead of time and reheated.
