- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup brewed espresso
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, combine the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the brewed espresso, until fully combined.
- Divide the batter among the cupcake liners, filling each about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool.
- In another bowl, whip the heavy cream and powdered sugar until soft peaks form. Gently fold in the mascarpone cheese.
- Once cupcakes are cool, pipe or spread the mascarpone mixture on top of each cupcake.
- Optional: Dust with additional cocoa powder before serving.
Notes
- For a stronger coffee flavor, you can soak the cupcakes in a coffee syrup before frosting.
- Allow cupcakes to cool completely before adding the frosting to avoid melting.
