- 4 fillets tilapia
- 2 red bell peppers
- 3 cloves garlic
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/4 cup fresh basil
- 1 cup vegetable broth
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- Roast the red bell peppers until charred, then peel and chop them.
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add roasted peppers and cook for a few minutes, then add vegetable broth and seasoning.
- Place tilapia fillets in a baking dish, pour the sauce over and bake for 15-20 minutes.
- Garnish with fresh basil before serving.
Notes
- For a spicier version, add red pepper flakes to the sauce.
- Serve with rice or crusty bread to soak up the sauce.
