- 2 fillets tilapia
- 1 cup quinoa
- 1/2 cup crumbled feta cheese
- 1 cucumber, diced
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and drain.
- In a pot, bring vegetable broth to a boil, add quinoa, reduce to simmer, cover, and cook for about 15 minutes until water is absorbed.
- Meanwhile, heat olive oil in a skillet over medium heat. Season tilapia with garlic powder, oregano, salt, and pepper.
- Cook tilapia for 4-5 minutes on each side until cooked through and flaky.
- Fluff quinoa with a fork, then mix in diced cucumber, feta cheese, and lemon juice.
- Serve tilapia on a bed of quinoa mixture.
Notes
- For added flavor, marinate tilapia with lemon juice for 30 minutes before cooking.
- This dish can be served warm or cold.
