Ingredients

  • 2 fillets tilapia
  • 1 cup quinoa
  • 1/2 cup crumbled feta cheese
  • 1 cucumber, diced
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and drain.
  2. In a pot, bring vegetable broth to a boil, add quinoa, reduce to simmer, cover, and cook for about 15 minutes until water is absorbed.
  3. Meanwhile, heat olive oil in a skillet over medium heat. Season tilapia with garlic powder, oregano, salt, and pepper.
  4. Cook tilapia for 4-5 minutes on each side until cooked through and flaky.
  5. Fluff quinoa with a fork, then mix in diced cucumber, feta cheese, and lemon juice.
  6. Serve tilapia on a bed of quinoa mixture.

Notes

  • For added flavor, marinate tilapia with lemon juice for 30 minutes before cooking.
