- 8 ounces rotini pasta
- 2 cups broccoli florets
- 4 slices turkey bacon
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt to taste
- Pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a skillet, cook the turkey bacon until crispy. Remove and crumble.
- In a large bowl, combine cooked pasta, broccoli, cherry tomatoes, red onion, and cheddar cheese.
- In a small bowl, mix together mayonnaise, apple cider vinegar, and Dijon mustard.
- Pour the dressing over the pasta salad and toss to combine.
- Add crumbled bacon, and season with salt and pepper to taste. Mix well.
- Chill in the fridge for at least 30 minutes before serving.
Notes
- Feel free to customize the salad with other vegetables like bell peppers or cucumbers.
- For a lighter version, substitute Greek yogurt for mayonnaise.
