- 4 large russet potatoes
- 1 pound ground turkey
- 4 slices turkey bacon
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup diced tomatoes
- 1/2 cup chopped green onions
- 1/2 cup sliced jalapeños
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the russet potatoes, then poke holes in them with a fork.
- Wrap each potato in foil and bake for 45-60 minutes until tender.
- In a skillet, cook the turkey bacon until crispy. Remove and chop.
- In the same skillet, cook the ground turkey until browned. Add the taco seasoning and mix well.
- Once the potatoes are baked, cut them open and fluff the insides with a fork.
- Top each potato with the seasoned turkey, turkey bacon, cheese, sour cream, tomatoes, green onions, and jalapeños.
Notes
- For extra flavor, try adding a squeeze of lime juice over the toppings.
- This dish can be modified with other proteins or toppings as per preference.
