Taco Potatoes are a delicious and easy-to-make dish that combines the flavors of tacos with loaded baked potatoes. Perfect for weeknight dinners!

Ingredients

  • 4 large russet potatoes
  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1/2 cup chopped green onions
  • 1/2 cup sliced jalapeños

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the russet potatoes, then poke holes in them with a fork.
  3. Wrap each potato in foil and bake for 45-60 minutes until tender.
  4. In a skillet, cook the turkey bacon until crispy. Remove and chop.
  5. In the same skillet, cook the ground turkey until browned. Add the taco seasoning and mix well.
  6. Once the potatoes are baked, cut them open and fluff the insides with a fork.
  7. Top each potato with the seasoned turkey, turkey bacon, cheese, sour cream, tomatoes, green onions, and jalapeños.

Notes

  • For extra flavor, try adding a squeeze of lime juice over the toppings.
