Sweet Potato Soup Bliss with Turkey Bacon and Creamy Goodness

Ingredients

  • 2 large sweet potatoes
  • 4 slices turkey bacon
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add olive oil and sauté onion and garlic until fragrant.
  3. Add diced sweet potatoes and cook for a few minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until sweet potatoes are tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in heavy cream, salt, pepper, and paprika. Heat through.
  7. Serve topped with crumbled turkey bacon.

Notes

  • For a vegan version, substitute turkey bacon with mushrooms and use coconut milk instead of heavy cream.
