Ingredients

- 2 large sweet potatoes
- 4 slices turkey bacon
- 1 medium onion
- 3 cloves garlic
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
Instructions
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, add olive oil and sauté onion and garlic until fragrant.
- Add diced sweet potatoes and cook for a few minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer until sweet potatoes are tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in heavy cream, salt, pepper, and paprika. Heat through.
- Serve topped with crumbled turkey bacon.
Notes
- For a vegan version, substitute turkey bacon with mushrooms and use coconut milk instead of heavy cream.
