- 2 large sweet potatoes
- 1 cup feta cheese, crumbled
- 1/4 cup honey
- 1 tablespoon olive oil

Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then cut them into bite-sized cubes.
- In a bowl, toss the sweet potato cubes with olive oil, salt, and black pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender.
- Once roasted, remove from the oven and drizzle with honey.
- Top with crumbled feta cheese and serve warm.
Notes
- For extra flavor, add a pinch of cayenne pepper or paprika.
