- 2 Cornish game hens
- 6 slices turkey bacon
- 1 cup cooked rice
- 1/2 cup chopped onion
- 1/2 cup celery, chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup chicken broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the turkey bacon in a skillet until crispy, then chop.
- In the same skillet, sauté onion, celery, and garlic until softened.
- In a bowl, combine rice, bacon, sautéed vegetables, parsley, salt, pepper, and thyme.
- Stuff the mixture into the Cornish game hens.
- Place the hens in a roasting pan and pour chicken broth over them.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes or until the internal temperature reaches 165°F (75°C).
Notes
- For extra flavor, marinate the hens in your favorite seasoning overnight.
- Serve with a side of vegetables or salad.
