  • 6 slices turkey bacon
  • 1 cup cooked rice
  • 1/2 cup chopped onion
  • 1/2 cup celery, chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the turkey bacon in a skillet until crispy, then chop.
  3. In the same skillet, sauté onion, celery, and garlic until softened.
  4. In a bowl, combine rice, bacon, sautéed vegetables, parsley, salt, pepper, and thyme.
  5. Stuff the mixture into the Cornish game hens.
  6. Place the hens in a roasting pan and pour chicken broth over them.
  7. Cover with foil and bake for 45 minutes.
  8. Remove foil and bake for an additional 15 minutes or until the internal temperature reaches 165°F (75°C).
