- 2 cups strawberries, sliced
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine strawberries, rhubarb, granulated sugar, lemon juice, and vanilla extract. Set aside.
- In another bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and brown sugar until fluffy. Gradually add the flour mixture.
- Press half of the crumb mixture into the bottom of a greased baking dish.
- Spread the fruit mixture over the crust.
- Crumble the remaining mixture on top of the fruit.
- Bake for 45-50 minutes or until golden brown.
- Allow to cool before slicing.
Notes
- For a touch of spice, consider adding cinnamon to the crumb topping.
- Serve warm with a scoop of vanilla ice cream for a delightful dessert.
