- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup unsalted butter, chilled and diced
- 6 to 8 tablespoons ice water
- 1 cup strawberry preserves
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- sprinkles for topping
Instructions
- In a bowl, mix together the flour, salt, and sugar.
- Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Stir in the ice water, a tablespoon at a time, until the mixture comes together.
- Divide the dough in half, shape into discs, and refrigerate for at least 30 minutes.
- Roll out one disc onto a floured surface and place it into a pie pan.
- Spread the strawberry preserves over the crust.
- Roll out the second disc and place it over the preserves. Seal the edges.
- Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until golden.
- Let cool before glazing.
- To make the glaze, mix powdered sugar, milk, and vanilla extract until smooth and drizzle over the cooled pie. Top with sprinkles.
Notes
- For a richer flavor, consider adding a little lemon zest to the strawberry preserves.
- This pie is great served with whipped cream.
