Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water
  • 1 cup strawberry preserves
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • sprinkles for topping

Instructions

  1. In a bowl, mix together the flour, salt, and sugar.
  2. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the ice water, a tablespoon at a time, until the mixture comes together.
  4. Divide the dough in half, shape into discs, and refrigerate for at least 30 minutes.
  5. Roll out one disc onto a floured surface and place it into a pie pan.
  6. Spread the strawberry preserves over the crust.
  7. Roll out the second disc and place it over the preserves. Seal the edges.
  8. Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until golden.
  9. Let cool before glazing.
  10. To make the glaze, mix powdered sugar, milk, and vanilla extract until smooth and drizzle over the cooled pie. Top with sprinkles.

Notes

  • For a richer flavor, consider adding a little lemon zest to the strawberry preserves.
