- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon baking soda

- 1 cup mascarpone cheese
- 2 cups fresh strawberries, sliced
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the mascarpone cheese, and mix until smooth.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- Once cool, spread a layer of mascarpone on top of one cake layer, add sliced strawberries, and top with the second layer.
- Frost the top and sides of the cake with remaining mascarpone and decorate with more strawberries.

- For an extra touch, drizzle with strawberry sauce before serving.
- Ensure the mascarpone is at room temperature for easy spreading.
