- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup strawberry jam
- 1/4 cup sliced almonds (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
- Add in the vanilla extract and mix until combined.
- Gradually add the flour and salt, mixing until just combined.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Using a cookie cutter, cut out shapes and place them on a baking sheet lined with parchment paper.
- On half of the cookies, cut out a smaller shape in the center.
- Bake for about 10-12 minutes or until lightly golden.
- Let them cool before assembling with strawberry jam in between.
Notes
- For an added crunch, sprinkle sliced almonds on top before baking.
- These cookies can be dusted with additional powdered sugar before serving.
