- 200 grams pitted dates
- 250 ml boiling water
- 1 teaspoon baking soda
- 100 grams unsalted butter, softened
- 150 grams brown sugar
- 2 large eggs
- 200 grams all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 pinch salt
- 300 ml heavy cream
- 150 grams brown sugar (for sauce)
- 50 grams unsalted butter (for sauce)
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, combine the pitted dates and boiling water, and add baking soda. Let it cool and then blend until smooth.
- In another bowl, cream together the butter and brown sugar, then mix in the eggs, flour, vanilla extract, baking powder, and salt.
- Fold in the date mixture until just combined.
- Pour the batter into a greased baking dish and bake for 30-35 minutes until a skewer comes out clean.
- For the sauce, combine the cream, brown sugar, and butter in a saucepan over medium heat until melted and smooth.
- Serve the pudding warm with the toffee sauce drizzled over.
