  • 1 teaspoon baking powder
  • 1 pinch salt
  • 300 ml heavy cream
  • 150 grams brown sugar (for sauce)
  • 50 grams unsalted butter (for sauce)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, combine the pitted dates and boiling water, and add baking soda. Let it cool and then blend until smooth.
  3. In another bowl, cream together the butter and brown sugar, then mix in the eggs, flour, vanilla extract, baking powder, and salt.
  4. Fold in the date mixture until just combined.
  5. Pour the batter into a greased baking dish and bake for 30-35 minutes until a skewer comes out clean.
  6. For the sauce, combine the cream, brown sugar, and butter in a saucepan over medium heat until melted and smooth.
  7. Serve the pudding warm with the toffee sauce drizzled over.
