Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup fresh spinach
- 1/2 cup ricotta cheese
- 1/4 cup grated parmesan cheese
- 4 slices of turkey bacon
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix spinach, ricotta, parmesan, garlic powder, onion powder, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the cheese and spinach mixture.
- Wrap each stuffed chicken breast with turkey bacon.
- Place in a baking dish and bake for 25–30 minutes, or until cooked through.
- Let rest for 5 minutes before slicing to serve.
Notes
- For added flavor, try marinating the chicken before stuffing.
- Feel free to add other herbs and spices to the spinach mixture.
