- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 pound cooked chicken, shredded
- 1 cup milk
- 1 cup flour
- 3 eggs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- In a bowl, mix flour, eggs, milk, salt, and oil to create a smooth batter.
- Heat a non-stick pan and pour in batter to form crepes. Cook until golden on both sides.
- In another pan, sauté spinach and mushrooms until tender. Add shredded chicken and mix.
- Fill each crepe with the chicken and vegetable mixture and fold.
- Serve warm, garnished with herbs as desired.

- Use freshly chopped herbs for additional flavor.
- Can be served with a light drizzle of sauce.
