Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 pound fresh salmon fillet
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 green onions, chopped
- 1 tablespoon furikake seasoning
- 1 sheet nori, cut into strips
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse and cook the sushi rice according to the package instructions.
- In a bowl, mix the mayonnaise and sriracha sauce until combined.
- Place the cooked rice in a greased baking dish, spreading it evenly.
- Layer the salmon fillet over the rice, then drizzle with soy sauce and sesame oil.
- Spread the mayo-sriracha mixture over the salmon.
- Bake for about 25 minutes, or until the salmon is cooked through.
- Remove from the oven and sprinkle with green onions and furikake seasoning.
- Serve warm with nori strips.
Notes
- You can substitute tuna or shrimp for the salmon if desired.
- Adjust the spiciness of the dish by adding more or less sriracha.
