- 1 pound chicken breast
- 4 cups chicken broth
- 1 cup cream cheese
- 1 cup chopped jalapeños
- 1 cup shredded cheddar cheese
- 1 cup corn
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, add the chicken breast and chicken broth, bringing it to a boil.
- Reduce heat and simmer until the chicken is cooked through, about 20 minutes.
- Remove chicken, shred it, and return it to the pot.
- Add cream cheese, jalapeños, cheddar cheese, corn, and spices to the pot. Stir until cream cheese is melted and ingredients are well combined.
- Cook for an additional 10 minutes on low heat, stirring occasionally.
- Serve hot and enjoy.
Notes
- This soup can be customized with the level of spiciness by adjusting the number of jalapeños.
- For a smoky flavor, add some diced bacon to the pot before cooking the chicken.
