Ingredients

  • 1 cup lentils, rinsed

  • 1 tablespoon ginger, grated
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, and ginger, cooking until softened.
  3. Stir in the carrots, cumin, coriander, and turmeric, cooking for another 2 minutes.
  4. Add the lentils and vegetable broth; bring to a boil.
  5. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  6. Use an immersion blender to puree the soup until smooth, adjusting seasoning as necessary.
  7. Serve warm and enjoy!
