- 2 cups carrots, chopped
- 1 cup lentils, rinsed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- Salt to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, garlic, and ginger, cooking until softened.
- Stir in the carrots, cumin, coriander, and turmeric, cooking for another 2 minutes.
- Add the lentils and vegetable broth; bring to a boil.
- Reduce heat and simmer for 25-30 minutes until lentils are tender.
- Use an immersion blender to puree the soup until smooth, adjusting seasoning as necessary.
- Serve warm and enjoy!

- For a creamier texture, blend more of the soup.
- You can add a splash of lemon juice for brightness.
