Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in carrots, lentils, spices, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Blend soup until smooth, then season with salt.
- Garnish with cilantro before serving.
Notes
- This soup can be made ahead and stored in the refrigerator.
- Add more water for a thinner consistency.
