- 1 cup lentils
- 4 medium carrots, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until fragrant.
- Add carrots and cook for 5 minutes, stirring occasionally.
- Add lentils, spices, and vegetable broth; bring to a boil.
- Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
- Blend the soup to your desired consistency and season with salt and pepper.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For extra creaminess, blend half of the soup and mix it back in.
- Customize with your favorite vegetables.
