- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1 cup bell peppers, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup cheddar cheese, shredded
- 10 large egg roll wrappers
- 1 quart oil for frying
Instructions
- In a large bowl, combine black beans, corn, bell peppers, cumin, chili powder, and cheddar cheese.
- Place about 2 tablespoons of the mixture onto each egg roll wrapper.
- Roll the wrapper tightly, folding the ends in to seal.
- Heat oil in a deep skillet over medium heat.
- Fry the egg rolls until golden brown, about 3-4 minutes on each side.
- Remove and drain on paper towels before serving.
Notes
- Serve with salsa or avocado dip for extra flavor.
- These egg rolls can be made ahead and frozen.
