Ingredients

  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup bell peppers, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup cheddar cheese, shredded
  • 10 large egg roll wrappers
  • 1 quart oil for frying

Instructions

  1. In a large bowl, combine black beans, corn, bell peppers, cumin, chili powder, and cheddar cheese.
  2. Place about 2 tablespoons of the mixture onto each egg roll wrapper.
  3. Roll the wrapper tightly, folding the ends in to seal.
  4. Heat oil in a deep skillet over medium heat.
  5. Fry the egg rolls until golden brown, about 3-4 minutes on each side.
  6. Remove and drain on paper towels before serving.

  • Serve with salsa or avocado dip for extra flavor.
  • These egg rolls can be made ahead and frozen.
