- 1 pound fettuccine
- 2 tablespoons olive oil
- 1 pound chicken breast, sliced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1 cup corn
- 1 cup bell peppers, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Cook fettuccine according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat, then add sliced chicken and season with paprika and cumin. Cook until browned and cooked through.
- Stir in heavy cream and bring to a simmer. Add Parmesan cheese and stir until melted and smooth.
- Add corn and bell peppers; cook until heated through.
- Toss the cooked fettuccine into the skillet and mix well to combine. Season with salt and pepper.
- Serve hot and enjoy!
Notes
- For extra spice, add some chopped jalapeños.
- This dish can be made gluten-free by using gluten-free pasta.
