Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the pumpkin puree, sugar, and brown sugar with the softened butter until smooth.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

- For a sweeter touch, consider adding chocolate chips or nuts to the dough.
