- 1 pound red beans
- 4 slices turkey bacon
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 4 cups chicken broth
- 2 cups cooked rice
- Salt and pepper to taste
Instructions
- Rinse and sort the red beans, then add them to the slow cooker.
- Cook the turkey bacon in a skillet until crispy, then crumble and add to the slow cooker.
- Add the onion, garlic, paprika, cumin, and chicken broth to the slow cooker.
- Cook on low for 6-8 hours or until beans are tender.
- Stir in the cooked rice before serving. Season with salt and pepper to taste.
Notes
- For added flavor, substitute some of the chicken broth with beer.
