- 4 slices turkey bacon
- 1 pound potatoes, peeled and cubed
- 3 cups mixed vegetables (carrots, peas, corn)
- 1 can diced tomatoes
- 4 cups chicken broth
- 2 teaspoons dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- In a slow cooker, cook the turkey bacon until crispy, then remove and crumble.
- Add the potatoes, mixed vegetables, diced tomatoes, chicken broth, thyme, garlic powder, onion powder, and crumbled bacon to the slow cooker.
- Stir to combine and season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot and enjoy!
