- 1 pound boneless, skinless chicken breasts
- 2 cups heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 pound pasta of choice
- 1 cup spinach, fresh
- 1 cup Parmesan cheese, grated
- salt to taste
- pepper to taste
Instructions
- Place the chicken breasts in the slow cooker.
- In a separate bowl, mix together the heavy cream, chicken broth, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken in the slow cooker.
- Cook on low for 6-8 hours or until the chicken is tender.
- Remove the chicken and shred it with two forks.
- Add the pasta and spinach to the slow cooker, and stir to combine.
- Return the shredded chicken to the slow cooker and mix everything together.
- Serve with grated Parmesan cheese on top.

- For extra richness, you can add more cheese.
