- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 package gnocchi (16 oz)
- 2 cups spinach
- 1/2 cup heavy cream
- 1 tablespoon fresh parsley, chopped
Instructions
- In a slow cooker, add the chicken breasts and olive oil.
- Pour in the chicken broth and add carrots, celery, garlic powder, onion powder, salt, and pepper.
- Cook on low for 6-8 hours or high for 4 hours.
- Remove the chicken, shred it, and return it to the pot.
- Add the gnocchi and spinach, and let it cook for an additional 30 minutes.
- Stir in the heavy cream and garnish with parsley before serving.
