- 1 cup dried red beans
- 4 cups chicken broth
- 1 cup chopped onions
- 1 cup chopped bell peppers
- 1 cup chopped celery
- 3 cloves garlic, minced
- 4 slices turkey bacon, chopped
- 1 tablespoon Cajun seasoning
- 2 cups cooked rice
- 1/4 cup chopped green onions
Instructions
- Rinse and soak the beans overnight.
- In a slow cooker, combine the soaked beans, chicken broth, onions, bell peppers, celery, garlic, turkey bacon, and Cajun seasoning.
- Cook on low for 6-8 hours or until the beans are tender.
- Serve the bean mixture over cooked rice and top with green onions.
Notes
- For extra flavor, add a dash of hot sauce to the serving.
- This dish can be made in advance and reheated.
