- 4 fillets salmon
- 2 oranges, juiced
- 1 lemon, juiced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound carrots, sliced
- 4 slices turkey bacon, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix orange juice, lemon juice, olive oil, salt, and pepper.
- Place salmon fillets in a baking dish, and pour the citrus mixture over them.
- Arrange sliced carrots around the salmon and top with chopped turkey bacon.
- Bake for 25-30 minutes or until salmon is cooked through.
Notes
- For extra flavor, marinate the salmon for 30 minutes before baking.
- Serve with a side of quinoa for a complete meal.
