Ingredients

- 200 grams all-purpose flour
- 100 grams sugar
- 100 grams butter
- 2 eggs
- 200 grams marzipan
- 100 grams dried fruit mix
- 1 teaspoon baking powder
- 1 teaspoon mixed spice
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Sift in the flour, baking powder, and mixed spice, then fold in the dried fruits.
- Cut the marzipan into small pieces and fold into the mixture.
- Divide the mixture into muffin cases, filling them about 2/3 full.
- Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow to cool on a wire rack before serving.
Notes
- For extra decoration, top with a thin layer of marzipan and glaze.
- These muffins can also be made with gluten-free flour for a gluten-free option.
