- 4 boneless, skinless chicken breasts
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups broccoli florets
- 2 cups baby carrots
- 1 lemon, sliced
Instructions
- Preheat oven to 400°F (200°C).
- In a small saucepan, melt butter and stir in garlic, thyme, rosemary, salt, and pepper.
- Place chicken breasts on a sheet pan and brush with garlic butter.
- Add broccoli and carrots to the pan, drizzle with remaining garlic butter.
- Arrange lemon slices on top.
- Bake for 25-30 minutes or until chicken is cooked through.
- Let rest for 5 minutes before serving.
Notes
- For a spicier kick, add red pepper flakes to the garlic butter.
- Substitute vegetables based on your preference.
