Ingredients

  • 4 large eggs
  • 6 slices turkey bacon
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the turkey bacon in a large skillet over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add the onion and bell pepper. Sauté until the vegetables are softened.
  3. Add garlic, cumin, and paprika, cooking until fragrant.
  4. Stir in the diced tomatoes and let simmer for 10 minutes.
  5. Make wells in the tomato mixture and crack the eggs into each well.
  6. Cover the skillet and cook until eggs are set.
  7. Top with chopped turkey bacon and garnish with parsley before serving.

Notes

  • For a spicier version, add crushed red pepper flakes.
