- 6 large eggs
- 1 cup kale, chopped
- 1 cup bell peppers, diced
- 1 cup mushrooms, sliced
- 4 slices turkey bacon
- 1/2 cup onion, diced
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, cook turkey bacon until crispy. Remove and chop.
- In the same skillet, add olive oil and sauté onions, bell peppers, and mushrooms until tender.
- Add kale and cook until wilted.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Stir in the cooked vegetables and turkey bacon.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes until set and golden.
- Let cool before slicing and serving.

- Serve with a side salad for a complete meal.
- Feel free to substitute other vegetables based on preference.
