  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, cook turkey bacon until crispy. Remove and chop.
  3. In the same skillet, add olive oil and sauté onions, bell peppers, and mushrooms until tender.
  4. Add kale and cook until wilted.
  5. In a bowl, whisk together eggs, milk, salt, and pepper.
  6. Stir in the cooked vegetables and turkey bacon.
  7. Pour the mixture into a greased baking dish.
  8. Bake for 25-30 minutes until set and golden.
  9. Let cool before slicing and serving.
