- 4 large eggs

- 1 pound breakfast sausage
- 4 large tortillas
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Cook the breakfast sausage in a skillet over medium heat until browned.
- In a bowl, whisk together the eggs, salt, and pepper.
- Pour the eggs into the skillet with the sausage and cook until scrambled.
- Lay a tortilla flat, add some of the egg and sausage mixture, and sprinkle with cheese.
- Roll up the tortilla tightly and repeat with remaining ingredients.
- Serve warm.
