Ingredients

  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound salmon fillet
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season the salmon with salt and pepper, then add to the skillet. Cook for about 4-5 minutes per side or until cooked through. Remove and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute.
  5. Add the spinach and cook until wilted.
  6. Pour in the heavy cream and stir to combine.
  7. Add the fettuccine and mix well.
  8. Flake the salmon and gently fold it into the pasta.
  9. Sprinkle with Parmesan cheese before serving.
