- 2 pounds russet potatoes
- 1 head roasted garlic
- 1/2 cup heavy cream
- 1/2 cup unsalted butter
- 3 large egg yolks
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop the russet potatoes into chunks, then boil in salted water until tender.
- Drain the potatoes and return them to the pot. Mash until smooth.
- Add the roasted garlic, heavy cream, butter, egg yolks, salt, and pepper. Mix until well combined.
- Transfer the potato mixture to a piping bag and pipe into desired shapes on a baking sheet.
- Bake for 25-30 minutes, or until golden brown.
Notes
- For a richer flavor, use a flavored butter.
- These can be prepared ahead of time and baked just before serving.
