- 1 medium pumpkin
- 200 grams burrata cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the pumpkin in half and scoop out the seeds.
- Drizzle olive oil over the pumpkin halves and season with salt and pepper.
- Place thyme on top of the pumpkin.
- Roast in the oven for 25-30 minutes until tender.
- Remove from oven and let cool slightly.
- Top with burrata cheese before serving.
Notes
- For added flavor, sprinkle some chili flakes on top before serving.
- Serve with crusty bread for a complete meal.
