Ingredients

  • 1 medium pumpkin
  • 200 grams burrata cheese
  • 2 tablespoons olive oil

  • 1 tablespoon fresh thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the pumpkin in half and scoop out the seeds.
  3. Drizzle olive oil over the pumpkin halves and season with salt and pepper.
  4. Place thyme on top of the pumpkin.
  5. Roast in the oven for 25-30 minutes until tender.
  6. Remove from oven and let cool slightly.
  7. Top with burrata cheese before serving.

Notes

  • For added flavor, sprinkle some chili flakes on top before serving.
