- 4 cups chopped rhubarb

Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine rhubarb, granulated sugar, flour, and vanilla extract. Mix well and transfer to a baking dish.
- In another bowl, mix oats, brown sugar, flour, and cold butter until crumbly. Spread over the rhubarb mixture.
- Bake for 40-45 minutes until the top is golden brown and the rhubarb is bubbly.
- Let it cool for a few minutes before serving.
