- 1 ¾ cups all-purpose flour
- ½ cup powdered sugar
- ⅓ cup almond flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup raspberry jam
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, powdered sugar, almond flour, baking powder, and salt.
- In a separate bowl, cream the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Roll out the dough on a floured surface to about ¼ inch thickness.
- Cut out cookie shapes and transfer them to a baking sheet lined with parchment paper.
- Use a smaller cutter to cut out the centers of half of the cookies.
- Bake for 8-10 minutes until lightly golden.
- Once cooled, spread the raspberry jam on the solid cookies and top with the cookies that have cut-outs.
Notes
- Ensure the butter is at room temperature for easier mixing.
- Feel free to use different types of jam for a unique flavor.
